Ingredients:
3 cups long-grain glutinous rice
1 1/2 tsp salt, divided
1 cup peeled split mung bean
1 1/2 cups water
1 lb pork butt
2 shallots
2 tsp fish sauce
1/2 tsp sugar
1/2 tsp coarsely ground black pepper
2-16 oz packages of banana leaves, cleaned • Preparing Banana Leaves
Other Materials:
8-inch X 9-inch piece of card stock
4-inch X 4-inch piece of card stock
2-inch X 10-inch piece of card stock
3 3/4-inch square food mold
4-inch square X 2-inch high cardboard form
4-8 feet length cooking string or twine
foil, plastic wrap, ruler
Yields: 4 cakes

Woah you make it look very easy yet I know it gonna be hard to do, but your way seems a lot more manageable. I love your origami of those banana leaf! So beautiful and neat! Thanks so much for make it so easy for me to follow. Successful on first try. The cake came out great. It tastes and look just like store bought. Amazon delivery could take weeks so I decide to make the mold myself out of foam board and a glue gun. Works perfectly.

Mình làm rồi, cám ơn rất nhiều. Cách làm rất khoa học, easy to follow. Mình lười nên làm nhân trước 2 hôm sau mới lôi ra làm tiếp giai đoạn còn lại. Ăn ko hết để tủ đá xong 2 tháng sau lôi ra hấp lại vẫn ngon như mới.

Wow this is a very detail technique. It is easier to handle it bundle. A suggestion, if you show on how to fold the banana leaves by using a piece of paper, it will be easier to see the fold and seem. Thanks.

And how long can I keep the cake in refrigerator or outside?

Hi Vy, thank you for subscribing and I appreciate your support! :) Using the pressure cooker is faster than the traditional stove-top method. The results are the same. The whole/unwrapped cakes can be left at room temperature for 1-2 days. (I know some folks keep the cakes at room temperature for 3-4 days or more but I worry about them going bad.) Once the banana leaves are removed, the cake should be consumed within the day and any leftovers refrigerated. In the fridge, the cakes are good for up to 1 week. Optionally freeze the whole cake (still wrapped in banana leaves) for up to 6 months. Enjoy!

I loved this video. My cakes came out more soft and mushy, and I don't know why? Also, Banh Tet cooked long as you did in your recipe, but mine look uncooked by the ends, Can I recook them again? Thank you very much and have a Happy New Year!

Hi Richard! For Banh Chung being a bit soft and mushy, did you press the cakes? For Banh Tet, just keep cooking longer. Are you boiling the cakes or using a pressure cooker? Good luck!

Can the same concept be apply to your banh tet recipe, using the instant pot.? Same amount of cooking time?

Hi Amy, you can use my banh tet recipe and cook in the Instant Pot if you have the larger 8 quart pot. Cook for the same amount of time. If you have the 6 qt Instant Pot, you need to make the banh tet a bit smaller and shorter so they all fit. Again, the cooking time is the same as the banh chung. Good Luck!

Hi Phuong, good question. The foil adds an extra layer of protection just in case the banana leaves have tears or holes. If the banana leaves are solid, you can skip the foil. Good Luck!

+Song Que Hi em, just double the width of the mold so 9 inches for the 4 main leaves. Cut the leaves about 9 1/2 inches tall. Good Luck!

When they're freshly made or just refrigerated, I enjoy eating them at room temperature. If the cakes have been frozen and then thawed, I like them fried or warmed in the microwave. After freezing, I find the cakes need some heat to make the sticky rice soft and moist again. I suppose to make 5x5x3 inches cake, so that I need to use an 8qt ip instead. Hi Vy, by volume your cake is more than twice the size of my cakes which are 4x4x2. To be on the safe side, I would recommend doubling the pressure cooking time to 3 hours plus an additional 90 minutes of natural pressure release in the Keep Warm setting. Banh chung can't be overcooked but it can be under-cooked so it's best to err on the side of more time rather than too little. Let me know if you have any questions. Good Luck!

Thank you for your support! Yes, I’m done with those square guys. I do exactly like what you teach in the video, and it turns out so great! Mine do not have perfect shape and not look neat like yours but thanks God, they taste so so good. The sticky rice is chewy and Filling has beautiful fragrance. I set the 8qt Lux for 3h like you said, but when it went a half way, I remembered your advice ( it can’t be over cooked, but can be undercooked), so I made it an extra 1h and then let those cakes sat in keep warm for 90mins. Total pressure cooking time is 4h and 90mins of NRP. Thank you a lots for your recipe and your help. You made my Tet!

Hi con, I am sorry to hear your frozen banana leaves are tearing. I use frozen leaves too but find some brands are better than others. If you have time, try buying a different brand. If you can't, wrap the cakes the best you can with the banana leaves and then wrap them securely with foil before cooking. Good Luck and let me know how they turned out. :)
