Recipe using desiccated coconut
Ingredients
1 cup desiccated coconut
¼ cup hot water (not boiling water)
2 cups all-purpose flour
1 ¼ teaspoon salt (Salt to taste)
2/3 cup water (Add extra 2-3 tablespoons if required)
Method
Add desiccated coconut to a bowl. Then add ¼ cup warm water. Give it a good mix.
Add all-purpose flour to another bowl followed by salt. Mix well.
Add the coconut mixture to flour and give it a good mix.
Gradually add water to the flour mixture. You do not need to knead the dough.
Divide the dough into 8-10 portions.
Lightly roll up each portion into a rough ball.
Flatten the dough until stretched and round-shaped with your palm and fingertips. (You can also dust a rolling pin with little bit of flour and roll the dough out and use a cookie cutter to form round shape)
Cook on medium heat until the bottom starts to develop brown spots.
Flip the roti over and cook until the bottom starts to develop brown spots on the other side.
Repeat with the rest of the coconut roti.
Serve warm with lunu miris
