I remember this background music from my childhood. After all these years the I remembered it just like yesterday. I don't remember the language any more well, but tears came out pouring when I heard that familiar sounds. My grandma "archhie" used to make this for us when we were little. Loved it so much. Miss my beautiful country.

Thank you So much for the recipe! I am Chinese but I was brought up by a Sri Lankan who would cook amazing curries and Sri Lankan desserts and I miss Sri Lankan food so much I can't wait to replicate some of the dishes now that I'm old enough :)

Pol pani pancakes -- fresh grated coconut cooked down with palm sugar then fresh lime juice and rolled into a pancake The pancakes used in Sri Lankan Pol pani pancakes are made with coconut milk. They are served with tea for either breakfast or afternoon Tea time - like the afternoon tea time called Tiffin during the colonial times in Sri Lanka. "Pani pol" (Means "Sweet coconut" in Snhalese, which is actually made by caramalizing grated coconut with Kithul Honey/ Treacle or Jaggery).
