My only thing is cos you said ‘dunno what I’m doing’: for a really tight wrap, lay the plastic wrap down first, a heck of a lot bigger than the Wellington. Then, you kinda use that to roll it into the pastry, just keep going and all the plastic comes together. Then you can make it REAL tight, like ya know ya boy likes!
