So my family is Cajun and a traditional dish for us is gumbo. Well back when I was in my early 20s I went through a Christian life school for people who struggle with life, controlling issues and addictions. Well, I was fortunate enough to be the lunch cook for about four months. The kitchen manager brought back a big box of frozen seafood that he picked up from the food bank. I’m talking, calamari, clams, shrimp, oysters, and two or three other things. Now, of course, this wasn’t the elite shellfish pack, no this was the Poboy pack. So I got on the phone and asked my mom to send me down the recipe, and I adapted it and we fed all 80 guys some seafood gumbo instead of hotdogs for lunch that day. Praise God.

Just an FYI for folks out there. The Cajun Trinity product is my favorite ingredient/spice blend. Even with your standard sauteed trinity, add some of this stuff and it is flavor amplified. I use it on all kinds of stuff. I also like the 2 step because it has tons of flavor and is not just red salt! I think it has a slight sweet taste. Use it on boiled crawfish, Gumbo, Etouffee, etc. Money dip on a turkey and cheese sandwich with pickled red onions, Awesome! But more importantly, if you see a real deal Wagner pot, buy it. If it's ugly, get some aluminum wheel polish and a drill and polish it like a mirror. Most awesome pots ever made. Thank you SK and Kracker assistant

To anyone who doesnt have alot of experience making a roux, NEVER "let it sit". You will burn it for sure and will ruin anything you put in it. He can only do that because he knows exactly how far to push it without burning it. And sometimes he burns it, lol. Just a pro tip for anyone who is a roux rookie, ALWAYS keep stirring!!!

Following from NoLa .. I do the roux just like you. Dark! Mom is from Bordelonville and I’m in my mid 60’s now. She had me making (helping with the roux) since I was 9. Oh, and eggs in the gumbo and a side of potato salad? It would be sacrilegious to do a gumbo without them!!!

I serve my Gumbo by taking a bowl of potato salad and using the bottom of a large ladle to press into it to create a crater. Into that crater, i place a small polenta cake. I butter a ramekin and stuff it with rice, turn it upside down and let the rice drop out onto the polenta cake. I then down this with whatever gumbo i may be serving. As ol' Kraker says, let the hate begin.... But i really enjoy eating gumbo this way.
