We have a place in Augusta KY - same exact economic story. Tough times, but the locals are the bomb and we have a new distillery that opened last year. Pendulum is swinging back, but the locals are straight talking, hard working, and some of the most sincere people you'll ever meet. We live in the pacific NW and when there's weather or storms and branches fall in our yard, they somehow mysteriously get cleaned up and none of our neighbors fess up as to how all that happens.

The community is amazing and they're so overlooked. I was born and raised in Northern Kentucky but went to College in Eastern, KY at MSU. Mom was from Eastern Kentucky coal country... Born in Ligon (Floyd Co.) and later moved to Denton (Carter Co.). Those hills were my playground when we'd go up and visit my grandparents in the summer. Many fond memories, but I also know how things have changed with coal and tobacco falling out of favor, and how it's hard living up there. It's good to see he's bringing the bbq culture up there. Maybe there's a new lease on life coming that will draw tourism and other businesses to the area.

@@BehindTheFoodTV Yes! That is a great idea with these kind of videos. It shows a more serious side about people, life and food. I was super impressed with your video and it just screamed American way of life in our rural areas and places that might be impoverished. Keep up the good work on these types of videos. I love to see other parts of America and how barbecuing and food and the way of life come together in different ways to enrich people’s lives in very different ways. Shows a good amount of contrast between how we live in different areas and it shows how food and the ways of life go together. @@BehindTheFoodTV He loses points for saying that beans don't go in Chili .... haha. He is fantastic! (Chili preference is like Biscuits and Gravy or whether or not sugar belongs in cornbread. As long as it tastes good, great ... but still gotta give people a hard time to continue the feud!) 😆 Also, my grandfather was a trucker and would bring regional sodas home all the time. I was ahead of the game on Vernor's Ginger Ale (Michigan and I think norther Ohio), Ale81 (I still buy a case of glass bottles when I go into Kentucky!), Cheerwine (NC, best cherry soda *on the market*, fight me! The cane sugar version stays fizzy longer than the corn syrup version. I swear it tasted better when I lived there in 07. 2 liters wouldn't last long enough to lose fizz, lol), Big Red (Alabama), and many others. Those started being distributed in TN where I live, so they're the ones off the top of my head. He would always bring back regional things from wherever the truck took him because he liked showing me that a world existed outside of rural Tennessee. When I got older amd was able to travel on my own, I already had a sense of seeking out "What makes this area unique. What do they enjoy that doesn't really travel outside of this area?" Your channel is a good example of those memories (and lessons) in video format. Happy to be a new subscriber!

At age of 72, 8.14.2024, I have had my hands in some kind of cooking since I was a little boy. I was born in the central part of South Carolina where I still live. Around here most barbecue done for business or large parities is done using open pit and hickory. Not all is done that way but that is the staple. Like you, I have eaten barbecue in many places. Some you call barbecue and some not so barbecue. There is no right or wrong way to cook beef or pork. It is either how you were raised or what you like. I get a little ticked when people start talking about regional barbecue and how it is supposed to be prepped and smoked in that area. That is when I call BS. If you make good barbecue and people like it and come back for more, I don't give a S where it comes from. Watching your video is just the way I like things. Simple and good. As for seasoning the meat, you are spot on for me. SPG. So many get carried away with rub when it comes time to eat you wonder what happened to the meat. You have some really good looking food. If I ever get up that way, I will stop and fill up.

My mom kind of had the same setup back in the 70s here in Texas! She basically had the same pit, without a firewall. She used the same seasoning, but she did not trim anything off the brisket! She had that place tell it burnt down. It was said by the competitor, in their big fancy new restaurant. The manager and the owner (sheriff) had a lot of pull in the county! People going to work that morning, said a sheriff's department car was sitting in the drive before the fire! She had a really good business at the time!

I can't say the thought of stuffing my chicken with chicken entered into my mind. I'm enjoying this series. I found it because he got schooled by Harry Soo. His brisket rub is similar to Harry with all the pepper. I do it similar now. My start was making my own all purpose seasoning, courtesy of Malcom Reed's channel. 1 part salt, 1/2 part garlic, 1/4 part pepper. I still use it for all kinds of everything. My brisket rub evolved from that to removing half the salt for Lawry's. Then I increased the pepper a lot, including adding pepper after the rub. So his rub is very similar to mine.

Another brilliant vid guys. And I’m gonna say it’s not just an American dream these people are doing, it’s a dream of people around the whole world. Sharing good food, sharing good times, nothing but sharing everything good with other good people. BBQ’s have that attraction of bringing out the best in people with the biggest smiles on their dials with dinner sized plates for eyes Love your work Al and Nick, and all the crew in KY … hmmm, can I join you when you go back to film grandma’s fried chicken ? 😍

Middlesboro KY here, lived in Texas last 30 years. I love seeing my homeland in the background, hearing the familiar accent, and all wrapped around my favorite thing on earth. BBQ!!! For me the taste of the region is the most important ingredient of all, THE WOOD! Love some Texas post oak and mesquite and would love to learn more about your local options. I will be back in town beginning of next month. Best of luck to ya good sir!

Thanks for all the background about the area and how they are hanging on. What type of wood are they using from the area? Yes for that Grandma Fried Chicken, fried chicken is one of my favorites foods. That custom designed smoke does give a totally different look to the finished product on the bottom. What kind of sauce does East Kentucky use? How were those wings? What is the real taste difference between KY and Tx BBQ?, is it lighter in smoke taste, not as much bark? Sure glad you stopped in this BBQ Pitt and bring all the history of the are to us. Really enjoy these schooling videos. I give the seasoning method a try on my pull pork smoke in about two weeks.
