Question is do you sweat the olives or roast them? It's like even though you shouldn't cook your Parma ham if you do is it crisp brown but maybe too salty or just slightly fried.

Posso consigliarti di utilizzare solo l'aglio spaccato in due parti senza buccia e come pomodori utilizzare i ciliegini oppure i piccadilly spaccati in due facce a fuoco alto girando di tanto in tanto e nel frattempo cuocere la pasta in acqua bollente leggermente salata e scolarli dopo appena passati 11 minuti e giungerli nella padella dei pomodori con l'aggiunta di foglie di Basilico fresco dopo che il tutto si è mescolato ed il pasto è pronto. Mai aggiungere olio a crudo dopo la fine della cottura.

I don’t bother cooking the tomatoes! Splash of olive oil, lots of fresh garlic, cut up basil, cubed cheese, and lots of home grown tomatoes. Let them sit in the bowl for 30-45 minutes, add pasta. The BEST summer dish! Soak your bread in the juice…. It’s got to be Real Tomatoes!

@@RobertSmith-up9rz let me explain...when you add say a teaspoon of lemon to many dishes like this one with tomatoes you will heighten that ingredient...if you add more than that then the lemon flavor will come through but a teaspoon does wonders with tomato sauces, stews and will even "wake up" canned vegetables....give it a shot...this can be an especially good method if one has to eliminate salt from a diet because of hyper tension

As a Neapolitan I know this dish very well, the name is Spaghetti alla Scarpariello Scarpariello comes from the Neapolitan the little shoemaker was the dish that women prepared for their shoemaker husband who had to go back to work quickly. there are 2 mistakes: either you fry the oil lightly or if you don't want to fry it, you can put it raw in the final part. Lastly, there is no pecorino or parmesan cheese and a pistil of dry Calabrian chilli pepper goes into the sautéed onions and garlic. However, this is the basis of Italian and Neapolitan cuisine as you can see, it is simple, you shouldn't overdo it and above all the products are fresh and not industrialised. You understand this and you understand Italian cuisine. above all it must be understood that if you want to add a product if this product alters the flavor or makes the dish too greasy, unbalancing it and making it become something very dangerous. He’s probably using top-shelf tomatoes, expensive olive oil, great onions and garlic, and high-quality spaghetti. If you know how to cook, and you have a refined palate, there’s going to be plenty of flavor there. The goal of that dish is to taste the pasta itself, and the tomatoes, not some sauce or seasoning.

I mean it depends on what you're making. If it's a pasta salad you wouldn't want all that starch. It's not removing flavor it's removing starch. A lot of Asian dishes will have you rinse your noodles. Especially in Japan with cold noodle dishes where the noodles are being dipped. It's not like a rule

Mai visto fare tanti errori nel preparare un semplice piatto di spaghetti. Una serie interminabile di obbrobri. Un sugo di pomodoro a secondo dei casi si fa' o con solo aglio o con solo cipolla. La cipolla eventualmente va sminuzzata e lasciata sciogliere, altrimenti fai gli spaghetti con la cipolla (vomitevoli) L'acqua di cottura serve per legare, ma se c'è del sugo e davvero da ignoranti aggiungerla. A vederla faceva al quanto schifo se l'avesse preparata per me gliela avrei fatta mangiare tutta a lui, di solito quella pasta fatta così noi la usiamo per incollare i manifesti. Tucci "vate cocc'"
