There's actually a brief period of starch (/CHO) digestion in the stomach (fundus area)... salivary amylase contributes around 20-40% of CHO digestion.. but only around 5% of the starch is broken down in the mouth since we don't keep our food in the mouth for a long time... salivary amylase then continues digestion on the way to the stomach and in the fundus area. However once it goes down and mixes with the gastric juices (and exposed to ph below 4) it is inactivated.... (source: Guyton 13th ed)

The role of salivary Amylase(I guess a-Amylase?) is according to my professor too down played is at has a small but important role is breaking down starch, nearly 40 %. This is due to amylase is not deactivated straight away when the bolus reaches the stomach, but since it is inside the bolus it takes time for the HCl to deactivate all of the amylase. Hence, amylase can brake down nearly 40 % of the starch already before we reach the small intestines.

Could you add something here? Starch also causes most of the known illnesses. If you exclude starch entirely from food, you cure almost every disease. So something happens differently here as theoretically should.
