Where 1 pro generally dukes it out against 2 diamond joes, but the amount of pros and joes can change, say 1 gold 1 plat and 1 diamond joe vs 1 pro, or 1 masters 2 diamond and a plat joe against 2 pros. It's really up to you. Only rule is is that there is no worker rushing.

Build more production buildings then. Also, have your production buildings on a hotkey so you can select them and build while not looking at them. Use hotkeys to build the units as well. The more hotkeys you learn in this game the faster you can play. The faster you play the more stuff you have to just steamroll your opponent. Don't worry about micro all that much. Micro only saves you if you and your opponent have similar amounts of units. But with that being said, having a nice concave will make your units so much more effective if they are ranged, if they are melee you want to surround the enemy with them.

I think what a lot of this shows is that people watch some build videos and then get lost early on after some setup of sorts. Pro gamer videos do set the scene with what people can make or build and in what order but if you don't have the general know-how it just makes it...painful to watch. It is however a great learning experience for new players and I think these videos (maybe not this low rank..) would give a good base for upcoming players. I think the reason the natural expansion command centers get flown away from the main base is because the defending player is hoping to buy just a bit more time by drawing the enemy army away from the main. Pretty much assuming the natural base is lost, and, not wanting the flying CC to die, then have enemy units right there blowing up supply depots. Just my guess.
