I know what I'd do to your bike because I'm currently doing it to my R100GS minus one thing. I'd keep the motor, frame, swing arm and final drive. I had a frame shop take 1.5 inches out of the frame down tubes(raises engine, straightens trans to driveshaft angle) and frame bracing. Stock engine with TM34 Mikuni carbs. Taller 5th gear. 320 disc brake kit on stock forks c/w 19" front wheel. Simplified electrics, single round headlight and stripped of everything that is not needed. Sort of a HPN type build from the mid 1980's. With your bike I would also look into a beefier Japanese fork. Subscribed and will watch your build, whatever you do. Points taken off for pod filters, missing fenders and Firestone tires lol
