For Van Life, airport parking is crazy cool- and if the said airport doesn't prevent access to the food court (without a airplane ticket) - you have eating out available as well as hanging out working on the laptop etc. and almost always free wifi.

Airport parking lot….genius idea!!! Especially if you need something to do. Go hang out in the airport till you have to go bed. Walk around in a climate controlled place (saving energy or fuel in van), have a nice meal, use their restrooms, have a drink, or simply people watch! It breaks up the time.

As a Swede I will tell you how to make Hasselbackspotatis. Use small to medium sized potatoes, after you've cut through them you should put butter all over, then top them off with breadcrumbs. Salt, pepper and paprikapowder is a good choice of spice aswell. In the oven at 225 degrees Celsius for 50-60min. The butter will melt into the plate you're using, and every now and then you should use a spoon and sear the potatoes with the butter. I love this dish with a nice steak to it and some asparagus.

reason your potatoes didn't come out right is because you didn't lather in the oil deep enough into the crevasses, they are supposed to be essentially fried crispy almost like potato chips (though not so dehydrated or crunchy), not simply "baked". would also help to open them up a little bit so the moisture can escape, that will really crisp them up.

Butter is even better than oil, I add butter on top atleast 4 times during baking. To add to the crisp I also put panko breadcrums mixed with parmesan on top.

For your potatoes, try salting them before you put them into the oven. Re-apply your olive oil mixture when removing them from the oven and applying the cheese. The cheese inbetween the potatoes is good but slice the cheese into thin strips when putting them on top of the potato.

For the potatoes try a miso glaze: 2 tablespoons vegetable oil or other neutral oil 1/4 cup miso paste (I use awase miso which is a mix of both red and white miso paste) 2 tablespoons mirin 1 tablespoon granulated sugar 1 tablespoon sake sesame seeds Slather on during the last 5 +/- minutes of cooking

These vans seem pretty cool, but then you realize there's no shower and no toilet like a real RV. Imagine having explosive diarrhea lol, and driving around at 2am looking for a toilet, and then having to use a bunch of wet wipes because there's no handheld bidet or shower. I don't know man doesn't seem very sanitary. Rather just trip in a Sienna with the middle seats taken out, and save a ton of money.

ABQ Airport is $3.98 / day for uncovered self park. There’s a gravel space right near the parking lot entrance where you can park there overnight no problem right by the airport parking … stay overnight on the concrete slab. I’ve been there probably 40 times. Cracker Barrel just up the road is super quiet surprisingly

I think you’d you’d want to finish the potatoes on a very high heat, basically a broil to create texture. And, yes, the oil spread should include salt. I would avoid overdoing things by adding cheese, it doesn’t play well with rosemary.

If you've got a broiler in that oven, broil the taters for about 5 minutes after you put the cheese on next time. That'll brown and crisp it up. Or, no broiler, use a torch.

for best super pancake results slower more time during heat really sends it home. i have used baking powder to help the cake adhere to itself a bit better and yeah if you ever forget to turn it still comes out cake like just with steam holes in it. (hope that gives an idea of how much time) what barely over low/med and 30+ mins for normal skillet, iron prolly 5-10 more.

I drive 18 wheelers, was just in Edwardsville, KS where it was down to 15 degrees for several days. I have nothing heavier that a hoody and I walk into truck stops in those temperatures. Helps that I am of Scandinavian decent.

Get a instapot Ryan. You can do potatoes in about ten minutes. Rice and pasta takes about twelve minutes. No boiling and you don't waste all that water.

you can micro the potato for a few mins then finish off in the oven. I do that and it taste like it was baked the entire time!

For the potatoes cook them with salt (chunky sea salt is the best) and then at the end if your oven can do it set it to broil until darker and crispy. I've been making this with my steaks ever since my mom made it for me when i was a teen

Pancakes recipe : 2/3 eggs, one medium or large banana. Mix them together (bendler works best) and cook. It cook fast, use bacon fat for extra decadent flavor. Keep them smallish, no gluten to keep them together. By the way, what is your van mileage, with this kind of weight? Have a great day!😊

Cut the potatos in half first, long ways, then do the slices with the flat side as the bottom. They make up some garlic butter and brush that ontop with some salt and pepper. Stick them in the oven for 20-30min, pull them out and brush them with some more garlic button, add some chives, and put them back in the oven for another 20-30min.... your welcome

Best van food I've ever seen. I worked in a French restaurant where we made those potatoes. We did what you did in the beginning but added chicken stock to the pan. Big difference. You might also want to try fondant potatoes which are easier and tastier. First video I've seen of yours but excellent van, excellent cooking!

I work in the airport we have our own parking lot for employee and of course theres no towing so living like this while employed by an airline company say American Airlines or United etc. Might be beneficial for you

try hasseback chicken breasts. it's the same process, and fill the chicken slots with cheese--i used mozzarella--alternating with tomato slices, a drizzle of olive oil and whatever herbs you like. bake in oven untill done, but you could probably fry and steam them in a frying pan.

😂 in Hartsfield there was a homeless woman sleeping upstairs on the third level stealing luggage sleeping in a sleeping bag for years. I thought she was a bunch of clothes and almost hit her one night, just saw big ole eyes. With a proper stealth van you can live anywhere if youre not a goofy pet person.

Another great vid.. but the Hasselback's being average was totally your fault. They need to be oiled/buttered completely and utterly to go golden and crisp up. Next time, loads of oil/melted butter/seasoning combo in a container and dunk each potato... Try pull the potato along the intact 'spine' to fan the cuts on dunking and get the mixture to penetrate. You won't be disappointed.

I would definitely use a block of real sharp cheddar cheese cut in really thin slices. Velveeta or any of those individually wrapped slices of pasteurized processed so called cheese will ruin anything it goes on.
