I now watch alone, and it seems strange to me, yet. but I still enjoy your videos...

This was my first year growing tomatoes. Did container gardening. Only did 6 Roma plants and 2 beefsteak plants. Had enough big tomatoes for BLT’s all summer. Have done a couple loads of crushed tomatoes and homemade Rotel. Have several bags in freezer for making salsa. Also have about 4 gallon bags of green tomatoes in freezer (had to pick early cause had to be out of town for a month) and planning on making salsa verde. Have really enjoyed the growing and canning process and definitely will do again next year!!! Have learned a lot from your videos, thank you so much.

I LOVE my steam canners. So much easier than waterbath because no heavy lifting. 👍🏻👍🏻

I absolutely love that. The steam canning makes it easier, but even if I had to do traditional water bath canning, the taste is beyond delicious.

I will scoop out a lot of the liquid while the tomatoes cooking down. Drain it through a sieve and can it in half pint jars. That is my tomato juice.

I have, but there are only two of us. This year planted 19 tomato plants this year. 13 died from blight. The remaining plants are just now full of tomatoes. I did put four gallon bags in the freezer already.

Good news about you needing to add a little water to the last jar- is for newbies, that’s a great tip to know! That’s how my grandma taught me. I’ve never done steam canning… I may need to do this!

I do about the same process, except after the initial cook I put the tomatoes in the blender for 10 seconds at the slowest speed. Then run it through a wire mesh strainer to remove the seeds and skin. Then cook down to reduce by half. I had about 25 Roma and San Marzano plants this year and have made about 20qts so far with a few more to go. It was a great year for tomatoes.

My tomatoes didn't do well again this year. I am however , inundated with Tabasco and Thai chili peppers. Our green peppers are also just coming in. We are in southwest Georgia.

I grow (more than) enough tomatoes a year for all my tomato products (several types of salsa, soup, several types of pasta sauce, passata, paste, ketchup, chili starter, bruschetta, bbq sauce, taco sauce, salsa verde, green enchilada sauce, green Tom curry in a hurry) Plus enough for fresh eating. Last year I grew enough to can two years worth of products, with the thought I'd not do as many tomatoes this year, however, I still grew a ton (225 lbs)of tomatoes and had to put them up. So I'm thinking next year, I'll only grow enough for fresh eating and concentrate on using that space for something else.

Those tomatoes were beautiful! Question… Do you still use Tattler lids? I’ve just now started down that road. After seeing prices on a box of 12 wide mouth lids from Ball..$9.00 here in East Texas.. thought it would be a good time to try my Tattlers out and get that skill under my belt. 👩🏼🍳

Yes, waterbath, canning and steam canning are interchangeable as long as you don’t overstep the timing for the steam canner. You can only steam can for 45 minutes maximum it will run the canner dry most likely and you’ll have a fail.
