Very tasty, it has a very unique Black Glutinous Rice aroma and the taste is so soft, fluffy and spongy. Its nutritional value is very high
Ingredients:
40g black glutinous rice flour
70g rice flour
60g castor sugar
55ml milk
30g corn oil
3 eggs (65-67g)
1/4 tsp salt
1/2 tsp vinegar
removable bottom baking pan size 6x4 inches
食材料:
40克黑糯米粉
70克粘米粉
60克细砂糖
55毫升牛奶
30克玉米油
3粒鸡蛋(每粒重65-67克)
1/4茶匙盐
1/2茶匙醋
脱底烤盘6x4寸
use the same recipe and same prepare method, this cake can be baked at a preheated oven at 150°C for 40-50 mins, baking time depend on the accuracy of oven's temperature

Looks so good. May I ask why you have to put the cake tin inside another container before putting in the steamer?

That's so far one of the best methods in steaming this type of Cake in term of its beauty & rate of successful, with this method, you will reward with a convex surface of Cake instead of flattened surface. What we want in steaming this type of cake is the heat that generated from the steam not the steam that penetrated into the cake which will ruin the cake rises perfectly.Thank you

First time read blk glutinous rice flour but I don't think I can find in klang. Git glutinous rice flour but I don't see blk one.

I just tried out your recipe but ran into a problem. When I add flour to liquid mixture, it coagulated into a dough ball, not like yours which looks like flowing peanut butter texture. Any idea what happened? All the measurements are as per recipe😅 What should I add to get the texture you have? And after removing cooked cake, does it have to cool before cutting? Thanks🙏

Your problem could be due to your flour having higher water absorption than mine, or that you didn't filter or add the flour in batches or gradually to the liquid mixture. if it is the former, then you can add in additional milk bit by bit until you achieve the batter consistency as shown in the video. The cake can be cut as long as you feel comfortable of holding it, not necessary have to wait until cool completely. Thank you

hihi 老师,除了黑糯米粉外,还有什么可以替代的吗? 如果跟着这个食谱,我可以换成做斑斓汁,橙汁,番薯,金瓜等口味吗?

不建议变改这个食谱,如果面糊的浓稠度拿捏到不对会变蛋饼。你所列的几种口味米蛋糕本人的频道大部分都有食谱。谢谢

@@xinyen2613 Hi Xin Yen下午好, 你所说的“不同的口味就配不同的食谱分量”也不完全对的,就以你所列的斑斓汁和橙汁是可以相互替代的. 但是番薯和金瓜就不同了,因为后者的含水量多,如果直接替代会导致面糊太稀或太浓,当你和蛋白霜混合时会出现拌不均匀的回题, 成品会不完美或甚至失败.谢谢❤🙏

沒黑糯米可以用白糯米代替嗎?如果用焗爐要用水浴法嗎?

可以的,因两者的吸水量不同面糊的浓稠度要拿捏如视频里一样. 但是, 如果可以我还是強烈建議你使用黑糯米,因为它的香味特別浓郁很好吃。如果用焗爐无需用水浴法的. 谢谢

@@userpp826 晚上好,我是用电蒸炉最小档的(小火), 如果你是用煤气炉可以用中小火,记的是水燒开后蒸45分钟, 息火焖3分钟后取出。谢谢

@@userpp826 你是说用电烤箱蒸嗎?如是那对不起了我还没有用过它😊.如果你是问可以烤吗?那可在150°C的预热烤箱中烘烤40-50分钟,烘烤时间取决于你的烤箱温度的准确性。谢谢

Hi Esterine下午好, 黑糯米粉和绿茶粉在这道食谱是不可以互相替代的,如果你要用绿茶粉可以参考本人的~蒸班兰米蛋糕~把香兰叶汁的份量换成绿茶粉+水。如果你要把我的这道食谱的蒸盘从6寸换成8寸盘,那你要把所有食谱的食材乘1.5倍. 谢谢 kzbin.info/www/bejne/pYKWgKp9jtqciK8

Hi Vanessa, 可以的, 但由于两者的吸水量的不同,你要留意面糊的浓稠度要达到和视频里所展示的一样. 記的要分次(不要一次过)筛入粉和液体混合物混合均匀, 在这阶段如果面糊太浓可以加少许的牛奶, 太稀可以加少许粘米粉.谢谢❤
