Is there a big difference in flavor/texture between steaming and boiling crab?
@nickawilliams5175 Жыл бұрын
Yes, there is a difference b/w steaming and boiling. When we boil our crabs, we season our water and boil them for a few minutes and then let them soak for several minutes. The flavor gets all throughout the crab meat. When you steam a crab like Maryland, the seasoning only gets on the outer shell and not to the meat.
@elijahn.8339 Жыл бұрын
@@nickawilliams5175 ok interesting, thank you
@EatswithTwan Жыл бұрын
@nickawilliams5175 in theory yes boiling will season the meat but that can be achieved with steaming as well. Boiling the crab in a bunch of seasoning can take away from the delicate crab meat. Maryland style we steam with Beer, vinegar and seasoning. I have seen the method of boiling and letting the crabs sit in the liquid it’s nothing wrong with that but saying steaming only season the outside of the crab is just not true.
@EatswithTwan Жыл бұрын
Yes there is a difference typically down south they boil with a bunch of seasoning and let the crab sit in the liquid. Sometimes boiling crabs take away from the delicate crab meat. It’s nothing wrong with that method thou just not my preference for blue crabs crabs. It’s great for Dungeness crab but not for blue crabs in my opinion. It’s a reason why Maryland is known for its blue crabs and crab cakes. We steam the blue crabs in beer, vinegar, and seasoning it really infuses the flavor into the crab meat, the seasoning on top is an extra bonus. Steaming crabs the Maryland way doesn’t compromise the texture or the flavor of the meat. But it’s all about preference. Boiling crabs reminds me of boiling shrimp. Thanks for watching the video

Huge difference. Boil if the has many jellyfish. Otherwise steam them. Much better steamed. My opinion.

OMG! I really enjoyed your video. Instructions short sweet and to the point. I'm from B-more and have not had good steamed crabs where I live in PG County. They were ok but not like the crabs my Granny use to steam for us. Your recipe is exactly how Granny did it. Now that I know the trick with the ice, I think I can handle cooking some crabs myself. Thank you🦀🦀🌽🌽

We don’t put corn in our crabs in Maryland
@EatswithTwan5 ай бұрын
That’s your opinion doesn’t mean it’s true I was born and raised in Baltimore I have seen folks put the corn with the crabs like in my video and I have seen some folks boil in water. Either way it’s up to preference but to say “we don’t put corn in our crabs in Maryland” is not true.
