In Chile, make sure you try their Syrahs, Pinot Noirs and Cabs with those salmon. De Martino Lagado Syrah and Santa Rita cabernet sauvignon are really good IMO. Sounds like a GREAT trip, I'm jealous.

What’s the difference between an Arctic char, dolly varden, and bull trout?

A true Arctic char is... only in the Arctic. Saying that nicely, but they are really just more around the far north....like towards the pole. The Dolly Varden and the Bull trout are both types of Char however, just different species, same genus (Salvelinus). These types can be found all the way into the Pacific Northwest as well as far North and true Dollys can be found in other parts of the world as well. Theyre easier to tell apart when they're spawning. Fun fact Brook Trout are also not true Trout....theyre char too.

Dollies can be good or terrible depending on habitat and diet.the sea runs yes sea runs in the fraser running to the Pitt river are great the ones that live year round in the lower river are almost always muddy .

Bull trout and dolly varden are the same fish ? I thought dolly varden are a species of trout that pertains to many different types of trout including bull trout

Ah the problems with "common" names versus scientific names. Technically there are two different species between a dolly varden and a bull trout. BUT lots of people use them interchangeably. They do have the same genus, so they are closely related.
