This will be my first attempt at Chapati bread so wish me luck. I do mission work in Kenya and Tz every summer and our cook makes Chapati for our team with each meal. So good! I am cooking tonight for my bible study group and I am making an African themed meal. I hope I don't disappoint. Thank you for sharing.

I just made the chapatis tonight! They were fabulous! Soft, Flaky and SO yummy, just like I remembered. I lived in Nairobi in 1993 for 4 months (and loved every day of it). I also made sukuma wiki and chicken curry/vege stew and UGALI...that is also how I remember it:-) I am SO glad I found your videos because the directions I had did not seem to come out the way I remembered the food. The techniques demonstrated in these videos were perfect and the food turned out flawless! I am making the pilau and irio next! Yesterday was samosas and mandazi (which disappeared very quickly!) I have been hired to cater a Kenyan meal for 20 in December! I have been practicing and I am very excited to be able to do this. I was trying to get my hands on some goat meat for nyama choma, but I am having a hard time. Guess I will just stick with kuku and stew! Oh, and I am suggesting an orange Fanta or Coca-cola with the samosas for an appetizer:-) Asante Sana!!!! rafikiwangu, Deb

Hi Deb!! Thank you for watching these videos and more importantly, for trying out the recipes ! You inspire me to keep making the videos. I have a feeling the event you're catering for in December will be very successful. I'd love to hear back from you to find out how the crowd liked it. Karibu sana rafiki yangu! Stella

Hi Rosa. Thanks for visiting my channel. I try to make the cooking instructions easy to follow and It makes me happy to hear that a lot of people have been trying these recipes with success. Cooking should be fun. There are times when things don't turn out perfectly, but that should not discourage anyone. Its always best to try again. No one was born with a pot and cooking spoon, so these are things we learn along the way. If I don't do stuffed turkey, I will do a stuffed chicken for you :)

Hi Stella, I want to say thank you and Im so happy I found your videos. I am fairly new to Kenyan cooking. I tried your chapati and samosa recipes. I look forward to checking out more. I was very pleased with the videos. The problem i ran into with the samosa was the peeling apart of the 6 layers. Im not sure what i did wrong but they did not peel apart. I want to try it again but I wanted to know if you have any suggestions. Erokamano.

I do it the other way round i put salt and sugar in the warm water and add flour while kneading and go on adding flour if necessary! I don't knead long maybe 5mins and leave it to rest while covered for at least 15mins. I'll try ghee but don't like oil I use margarine!

Hi Stella,I used hot water and oil to knead my dough and after resting it became hard and dry and made very hard chapatis.I was so disappointed.plz advice
@StellaAdhiamboHarris9 жыл бұрын
Hi Tyna. The only thing I could think of that gave you those results is the kneading time. The more you knead the dough, the more the gluten forms (the protein found in flour that gives it it's elasticity). If you don't knead your dough long enough, it could lead to hard chapos. The suggested kneading time is included in the recipe. Please try again (this time kneading the dough longer) and let me know if you get better results. Best of luck!
