Loved your Spinach recipe, even though, I did not have some items, it turned out pretty good... Learning to cook African style the food has a rich taste...I miss out on the salt fish, melon seeds, eggs, good with what I had...Next time I will have all the ingredients...my family enjoyed the Spinach Stew...not to hot or to salty. Yes,but Africans cook more natural and fresh foods,from scratch unlike other cultures...l cook some Chinese, Japanese, South Korean and Thai food none of them has these natural, fresh ingredients like Africans.

I watched your video, plus about 8-9 other videos on how to make Palava & Egusi soup! 😔 I wasn't born on the continent, so now I'm trying to catch up on what my ancestors have lost. I'm about 1/2 Congolese & 1/2 Nigerian (per my DNA test) + some others 😄, but I'm interested in all African food. ❤️ It was snowing today, so I didn't have some of the ingredients & had to make substitutions. I didn't have kobi, this is my 1st time hearing about it, so I used a little smoked herring. For the melon seeds, I ground pumpkin, sunflower & hemp seeds. Another video had onion, ginger & garlic paste, & you guess it - I was missing something again! 😂 This time, I had no fresh ginger, so I had to use ground ginger. That actually worked well. And finally, I used canned sardines, cuz I didn't feel like spending the extra time to cook some meat..... Anyway, it was freaking fantastic! 😍😍😍 I ate it with yellow yam & will definitely make this again!

Miss Stellazone just a reminder this stew is called "Palava sauce". Nkontomire( Cocoyam leave 🍃) stew is without the Agushi(Akatoa) but can add some eggs though. Am hungry 😋.

The beef stock is just the drippings from the sauteing/pan cooking of the meet. I usually season my beef with salt, Badia complete seasoning, moringa, and onion powder or onions, sometimes ginger and garlic, but it all depends on the recipe.
