Claypot chicken rice (砂煲鸡饭) is a one pot comfort food which is popular here in Penang and across Malaysia. This is an easy recipe to prepare and cook for the whole family to enjoy. What I love about this dish is its simplicity, yet mouth-wateringly delicious. You will especially enjoy the crunchy caramelized crust when the rice grains come into contact with the claypot and turn golden and nutty brown. Enjoy!
INGREDIENTS
650g half chicken
2 tbsp light soy sauce
1 tbsp oyster sauce
2 tbsp dark soy sauce
2 tsp sesame oil
1 tsp cornflour (cornstarch)
5 tbsp vegetable oil
1 Chinese lap cheong sausages, sliced
2 to 3 slices Salted fish (optional)
5 garlic cloves, finely chopped
1 thumb size ginger (sliced)
1 cap Chinese Shaoxing wine
1 1/2 cup jasmine rice
1 1/2 cup water (ratio 1:1)
3 dashes white pepper
sliced spring onion (scallions) to sprinkle
