I first learned about using baking soda to tenderize meat from America's Test Kitchen, so I tried it. The results were mixed. Yes, it helped tenderize the meat, but it also took away a lot of the flavor. I never did it again.

I'm so happy you shared the Mom's Brown Rice dish and feel it deserves more attention actually. I'm 62 and have been making it all my life and it's still one of my top 10 favorite side dishes EVER. So easy but so under rated. I melt a stick of butter in the pan while preheating my oven then add the other things to that. It's delicious unless you don't like onions. Can add fresh or canned mushrooms too.

Another cool way to thicken the sauce would be to slightly undercook the pasta and finish cooking it in the sauce, the added starch from the pasta will naturally thicken the sauce and infuse the pasta with the sauce.

I will have to try in air fryer some time. We have A large family though. I usually throw a bunch of different color peppers, smoked sausage, cubed potatoes, and seasonings mixed with a little olive oil baked with tiny dots of butter so yummy! One way you could possibly win him over to the cream cheese is by using the flavored spreads instead of just plain cream cheese. We love using the spicy jalapeño, chive and onion, or the garlic and herbs flavors in savory dishes. A bonus is that they are already soft so you don’t need to wait for them to soften.

Mandy (and Steven)- I also get quite a kick out of you guys. I made the creamy chicken recipe you recommended. (My sister says I am incapable of following a recipe- I should at least make it the first time according to the recipe, then make changes/substitutions later. This is part of why I do not bake) Since I'm allergic to peppers, I used a can of fire roasted diced tomatoes in their place. I drained the liquid into the measuring cup I used to reconstitute better than bouillon- I didn't want to waste the flavor. I also added a container of sliced mushrooms to the diced onions and garlic. I took it to my Ladies Bible study for our dinner and everyone loved it! I brought red pepper flakes with me as one of our ladies likes things spicier than the rest of us. It was a "go backer" for all of us, someone even had a (smaller) third serving. Thanks for all of the good ideas

I remove the stems from my spinach too. But, the reason is definitely different than most people. I was raised on a cattle farm and cows have "cud" which looks exactly like chewed spinach WITH the stems! So, my Mother always removed the stems so our spinach did not look like "cud". I grew up that way so I do it to this day as my Daughter. No "cud" allowed on our table. 😁
