SMOTHERED CHICKEN Submitted by David (my brother-in-law)
1.5 lb chicken tenders
2 cups cooked white rice (I used Jasmine cooked in chicken broth)
8 slices bacon, cooked and crumbled
1 1/4 cups milk
1 can cream of chicken soup
3/4 cup mozzarella cheese, shredded
1/2 cup cheddar cheese, shredded
salt and pepper and any other seasonings you'd like
Preheat oven to 375 degrees F. Grease a 9 x 13 baking dish. Spread rice on the bottom of dish. Season the rice w/ salt and pepper, if desired. Season the chicken how you'd like and layer on top of the rice. Whisk together the milk and soup until smooth. Pour over the chicken and rice. Bake at 375 for 25 minutes, uncovered. Remove from oven and top with both cheeses and crumbled bacon. Return it to the oven for 10-15 minutes more. Serve and enjoy!

I don't even know where to start with this. Ok yes I do. I couldn't take my eyes off your nails (I'm obsessed with nail polish) and that pink (I have to know the brand and color) makes me SO ready for warmer (NOT SUMMER) weather lol. The two smothered dishes may or may not have had me slightly drooling over here. Steven has the BEST announcer voice, seriously. Hi Mandy and Steven. First, I just have to say how well Steven describes the dishes. He does a better job than many of the food reviewers. David is great. I am going to cook this chicken this next week. Our great nephew, Charlie, has cerebral palsy. He was the junior Easter Seals Ambassador in 2022 in our area. I love that David is a teacher and doesn't let his different abilities hold him back. Charlie is 6 and he is one tough kid. I just love your family.

I've watched you for years and you have always reminded me of my mom-in-law. She lives in Texas and we lived with her for a year before moving back to Alaska. My youngest son has cerebral palsy. He had a stroke in me at 4-5 months gestation. His whole right side was effected. Now years later, I've had 15 strokes in the past 2 years. Mine mainly effects my left side. Together my son and I equal out, and he helps me in the kitchen. I love it. Seeing your brother in law help you this week is so special to me, especially. I watch you every week without fail!

David's recipe looked so good that I had to make it...had no milk so I substituted sour cream and it worked beautifully. I did cook the chicken longer because I'm paranoid about 'pink' chicken. And, of course, I took David's message to use as much cheese as I wanted...YUM! Also learned from David so we let everything cool off a little. My sister and I devoured half of a 9x13 pan in one sitting. It is SO GOOD! (Just a side note: I was so eager to tell you how much we loved it that I was typing furiously. Fortunately, I reread the comment before I uploaded. Otherwise, you would have thought that I cooked the children longer. Geez!
