@@Steve-Owens Dong Quai ( or female ginseng ) is normally prescribe by TCM doctors for female patients who have "difficulty" in conceiving. It is a herbal root more for female consumption. It has a distinctive aroma which you can smell down the road. Not expensive. Looks like "ginger root" whole. It has to be sliced to extract more of the flavour. It will definitely makes the "herbal soup" taste flavourful. Enjoy

Steve mate, Have you ever thought about doing some language classes while you are in Malaysia? They are a fun way to spend a Tuesday night or whatever and give you great insight into the local culture. Six months of working at it you will be surprised how much can be achieved. Bahasa Malaysia is probably the best option but Tamil or Mandarin would both be fun. Believe me, learning the language can change an expats life!

This recipe is as good as the Chicken Baked with Salt. Ingrt. - 1 whole chicken (preferably free range because their meats are springy) - 1) Wash the whole chicken inside (clean out all organs) and outside. - 2) Dried inside and outside chicken with kitchen towel until very dried. - 3) Then marinate or rub the whole chicken inside (cavity) and outside with coarse salt or rough sea salt and set aside for 2 hours. (Just for 2 hours. Prefer not more than 2 hours. Or else it will be very salty.) - 4) After exactly 2 hours, wash the chicken inside and outside throughly with water until no more salt. - 5) Dried throughly inside and outside the chicken with kitchen towel until very dried. (Preferably place the chicken in the refrigerated over night wide open so it can dried up the skin of the chicken for crispiness. - 6)Bring the chicken to wrap up with baking paper then another wrap with aluminium foils and place on a baking tray. - 7) Place in the oven to bake for 2 hours at 220 degree celsius. After 2 hours, open the folds and let it baked again until the surface of the chicken golden brown . Served hot with rice is the best. Optional - to put some Angelica roots slices. Just slots in between the wings and in the chicken cavity. Angelica roots are very heaty (means made your body warm). If you have hypertension better not to use. But it is very fragrant. Simple and Easy.

Easy homemade salted chicken. Angelica Sinensis (Dong Quai) and salt the 2 main ingredients. Commercial they use coarse salt to bake. For home style , 1. Clean chicken well and cut away extra fat. 2. Soak in salt water 30-40 minutes. Slice the meat with knife in few places and insert Dong Quai slices. For 1 person just use the whole drumstick (fresh, free range, black chicken) 3. Wrap chicken in aluminium foil or paper sheets. 4. Warm the oven earlier when bake in 40 to 50 minutes. Last, check chicken cook well.

when Malaysian refer to Kampong chicken.. what they mean is its a ''free range organically raise chicken''.. its basically chicken that runs around the Malay Kampong.. real Kampong Chicken should be tough and stringy and very slender in appearances.. some of the younger generation refuse to eat it now for obvious as the meat get stuck in between your teeths.. i don't think that Chicken you ate was a Kampong Chicken.. it looks too plump and too soft.. having said that if you love that chicken you will love even more chicken cooked ''encased in mud and clay'' then covered with smoldering charcoal for a whole day.. not sure if they are still around..
@Glee732 жыл бұрын
its still "free range" chicken, but in the modern farming sense. not the traditional running wild in the kampung type. They have more flavour, but not as tough. I've seen these chicken farms before, usually on a hillside, and the chickens are not caged, but I suppose they are fed more often so have a bit more fat. The famous ipoh chicken rice shops in town (not halal), serve traditional kampung chicken, very tough and stringy.
