After washing, i usually place the meat in s colander/rice strainer snd let drain. Looks delicious! Some flavourful pepoer sauce and that will make good cutters

You can find the Angostura Bitters in the Liquor section of the grocery in USA. I gfound it at the corner grocery in Los Angeles. It ain't cheap, btw.
