Made this and it came out just perfect, as he does it here, you tend to think that the mixture is a bit wet but it dries out nicely in the oven, and iy was very nice with vanilla icecream.

@zestydidra You could just leave the dates out if you like, make it a sticky toffee pudding instead. You could also substitute with sultanas / raisins / dried fruit etc ;)

@SvarteNordmann I recommend keeping brown sugar in an airtight container, and store it in a cool, dark place (the back of the cupboard)

@shaligirly You'll find mixed spice in the baking aisle at Coles (near the vanilla essence etc) - and use enough water to just cover them ;)

@ybn7831 Fresh dates are hard to come by in Australia, so I've always used dried. I'm not sure how you would use fresh ones in this recipe, Maybe someone here will have a recipe ;)

yeppers :) it's weird but it works. The sugar absorbs the moisture in the bread and softens so it's not rock hard

Ebony Parker I realize this response comes a year after you asked the question, but I assure you that you will likely not bite into a date if you soak the chopped dates in just-boiled water. Better still would be to rehydrate the chopped dates on the stove with water and a teaspoon of bicarbonate of soda (baking soda) boiling gently for 10 minutes and allowing to cool. This completely pulverizes the dates. I'm not sure raisins would work in this application as you'd have a lot more flavorless skin in proportion to fruit flesh in the pudding. I can't abide figs because of their nasty seeds. they ruin the fruit for me, but I find dates, especially Medjool dates are just intensely caramel-ly sweet. The first few times I had this pudding, I had no idea there were even dates in it.
