So might I suggest one more....instead of wielding that hulking Mezzaluna to chop the dates, try using simple kitchen shears. It is so much easier and quicker. Two to three snips per date makes the perfect size. (You can also wet-wipe the blades now and again with a watered cloth to keep the stickiness of the fruit from building up on the scissor blades, if needed.) My great-grandmother, grandmother and mother all used scissors to cut their dates for S.T. Pudding, the filling for Date Pinwheel cookies and fruit fillings for danish pastries. A rocking blade like a Mezzaluna is great for finely chopping herbs or for cleaving a pizza and such, but not so much for sticky fruit.

You missed one of the most important steps, adding bicarb in the boiling water/dates.

I made it twice with that method and both times I could taste the bicarb. It was unpleasant. I’m not sure if it’s a difference in the brands, but for this tutorial I added the bicarb at the same time as the flour. Thank you for noticing the difference ☺️

Nigella's recipe for the sauce is more than enough for the pudding. Adjust it to your tastes.
