Ms Jan, my Mom made a cake simular to this but instead of vanilla pudding she would use instant coconut cream pudding and instead of regular milk she used coconut milk. She also omitted the condensed milk mixture because she wasn't big on an overly sweet cake. She would either use 7 minute frosting or as she got older she used cool whip and she also toasted her coconut a bit under the broiler before putting it on the cake. You brought back fond memories of my Mom who passed in 1999. God Bless and Take Care

So good to see you. You feel like an old friend to me. 😊 I’m going to try this cake very soon. My mama used to buy whole coconuts and HAND GRATE the coconut meat for her special cake at Christmas. My mama put so much hard work and love into our home and food and I never knew we were poor until I was older. , I can’t even begin to compare to her and I miss her every day of my life even though she died in 1980 at age 63 when I was 32. You take care, Jan, and I’m sending love 💕 and best wishes to you and your family, and especially to beautiful Howard, since I adore felines of all kinds. This is such a great recipe! I like to toast the coconut in the oven until it’s golden before putting it on the cake. Gives it such a good flavor and texture! I brought it to class and everyone loved it.

My absolute favorite cake ... don't remember who gave me the recipe, but she swore that if you only make it during a holiday it has no calories ... right!!! ... I make mine with extra creamy Cool Whip and frozen coconut (remember, no calories) ... it is so good. With only me in the house, I don't make it much ... I'd eat the whole thing. It is good to divide it into two smaller cake pans and give one to a friend. Now I've got to make one ... I enjoyed watching you make it ... it brought back fifteen years of memories ....
