My favorite: water spinach. So healthy yet cheap back home, but more expensive here abroad. I am a Filipina and I love Filipino food but when I got here in France I got to taste Vietnamese nems which were really good. Now I am a fan of Vietnamese food. Merci Helen!

I am an Afro-American guy and I am totally new to Vietnamese cuisine!!!.So today I went to have lunch at a very lovely Vietnamese Restaurant in the China- town section in Manhattan,New York City. I ordered a dish of water-spinach with garlic/garlic sauce because I had watched your video on how to make it at home.Well.... all I can say was WOW..that was great!!!It was very tasty,very garlicky and very flavorful and very filling.I had my portion with bits of beef included as well,and an order of green tea to wash it all down.This was my first time and it really exceeded my expectations in terms of flavor!.So let me say to all my Black sisters and brothers out there....Lay off the Mickey-Deeze ,Southern Fried Chicken,Smothered Pork Chops , Pigs Feet and Ribs,.and start to eat and enjoy Vietnamese cuisine!!!. You will love it and live a lot longer life too! To your health!!!

when i. visited vietnam many years ago, i was so excited by the flavour of this vegetable. i think my mom was quite surprised i would ask for it almost every single meal, because it was not that special to her... i have fond memories of this dish... thank you

Thank you so much for this video. I followed your video to cook two times already and it is delicious each time. Wow! Rau muong is expensive nowadays. It cost me $4.50 for a big bundle; but it is worth it because the restaurant charges $13 for a medium order.

This is also very cheap and yummy in the Philippines! But the leaves of water spinach here is wider. We also like to dip it in soy sauce with a little chili sauce.

I was lucky enough to get some water spinach yesterday..the Vietnamese people at the salon next door have a guy who brings it to South Carolina from Florida, and I just happened to be there when he arrived :) They said it was Chinese broccoli, but when I searched for recipes for that, it didn't look like what I have. I can't wait to try your recipe!

Thank you for sharing this Helen! When I lived in China this was my favorite vegetable. They call it 空心菜 kong xin cai "empty heart vegetable" because of the hollow stem. So delicious with just a bit of garlic and salt! In Seattle, I am lucky I can find rau muống at most Vietnamese or Chinese grocery stores but, you are right it can be expensive!

I love eating this! I commented on one of your other videos saying I recently discovered your cooking videos. Vietnamese dishes are hard to make, I think, because they have a lot of ingredients and lots to prepare. You inspire me to try to learn how to cook more Vietnamese foods. I used to eat a quite similar dish while spending some time in Thailand. But there it's more commonly called morning glory, and they mostly season it with yellow bean sauce and fish sauce.And they also don't parboil it, but throw it into a wok when smoking hot and flames arise;)

I love sparing the boiled water with the juice from water spinach for a simple 'soup' yayyy! But as far as I'm convinced, the stir-fried water spinach will remain crunchy and green much longer if I don't put them to boil beforehand. Throwing them raw straight into the wok with highest heat and generous oil is the key :P

Hi Annie, it's perfectly fine to stir-fry without blanching, but you need a big wok on high heat (or make a small amount at a time). Otherwise it may long time to cook.

Adding salt to the boiling water increases the temperature of the water to more than 100°C, hence the vegetables is cooked faster and can keep the vitamin and green color :)
