Shims and wedges are great. I built a low retaining wall from large (1.5m x 2m x .5m) rocks that were excavated when we built our house 20 years ago.

Looks great! Maybe it's a stupid question, but is it really unnecessary to use any mortar? I know that arches have been build like this for millenia but is there no building code against that or something? And will you be repointing the wall?

original building was dry stone which was part of its charm. tragically they appear to be using cement mortar, lime mortar would gave been the correct choice to prevent future damage. filling the walls with mortar is more of a practical issue, very difficult to insulate/heat with draughty walls. the arch has a vertical joint in the centre which isn't optimal, keystone would be optimal both structurally and aesthetically - but it'll more than likely stay up.
