I love how the propellers or props look really skinny and then when they spin up, they get really thick and big and looks intimidating

That’s because (for those who do not already know) when the engines are first started, the props are “feathered” (the plane of the prop blade is parallel to the engine shaft). After the engines are started, the prop blade pitch changes to least steep (this is the equivalent of first gear in a car); this is what you are seeing. During flight, the prop pitch is controlled by the “propeller control” to serve the same function changing gears in a car serves. There are videos on KZbin which discuss “constant speed props” (this is what this type of prop is called).

The ATR42-320 is equipped with the same PW121 engine as the Dash8-100, and the sound is almost identical to the PW123 in the Q300.

When engines are off on a free turbine turboprop engine (pw120 in the atr) like those normally the condition levers when in off position also put the props in "feather" which makes the props angle to be perpendicular to the wind which is good when an engine fails midair as if they kept their normal operating pitch they would act as air brakes. If you look other turboprops which aren't free turbines you will see the opposite at start, you would see them "big" as they need to offer less resistance in the start as the propeller shaft is the same as the turbine shaft. (Tpe 331)
