this is a throw back to when cooking shows were so good... now we just have ridiculous competitions and angry old people yelling at young chefs/cooks... what happened to the passion and beauty of cooking... thank you for sharing!

What's going on Nick! I've been watching cooking shows my entire life. I may be giving away my age but since Julia child's. I do not watch the food Network or any of those other television programs. Because that's what they actually are. I love Jacques Pepin the most I would admit! But now you are my new guy! I've been a lifelong supporter of PBS. I am a pool contractor and a designer and I have that crazy style like yourself. I have been cooking for my wife and family my entire life! I love when you speak about your wife and her lack of a acceptance of Romano cheese. My wife likes Parmigiano-Reggiano better also. I hope you actually read this post I have never posted very much. I'm old school. I don't even know how to turn a computer on. I'm doing this from my cell phone. I've seen all of your episodes numerous times waiting for some new ones. My television stays on create TV! Keep up the good work. I did the chicken meatballs with cheese sauce the other night. But I broke the sauce. I did not let the wine reduce enough. And yes I used real Parmigiano-Reggiano you know the feeling lol. Digging your style keep it up!
