If you know anything about psychology, James is amazing material. He is so confident that he can transform it into being awkward. He isn't that shrunk down but pins his arms to his sides, says outrageous things, won't allow himself to be interrupted, ect. He could be material for an entire year of psych lessons

Chocolate makes a chilli. And frankly, I've found that lime juice does too. You won't find that in any recipe, I just tried it once trying to figure out what was missing. Frankly, citrus is a missing ingrediant in many dishes and makes the difference between good food and great. I hope this helps even one person.

Especially for a guy, the two traits I mentioned earlier are the primary basis for determining confidence imo.

He wasn't wrong about "chocolate" in spaghetti bolognese, it just wasnt in the specific recipe they were looking for. I just looked it up because its such a weird ingredient that maybe it could be true. I found a site that read adding cocoa powder to bolognese during the cooking process ads sweetness to take the edge off the tomatoes, and the chocolate flavour really adds to the rich beef juices from the mince. And I found a couple recipes with chocolate/cocoa powder

Or, and this does work, somehow... Peel a couple of carrots and drop them in unchopped. They absorb the acid from the tomatoes, while adding their carroty sweetness. Then just remove them once cooked, and you've got a killer bolognese or chilli sauce that's suitable for your lactose-intolerant friends.
