The Almond flour under the filling works well for stopping the bottom of the pie getting soggy, as it absorbs some of the filling liquid. And if you warm up the baking tray while pre-heating the oven is even better because that will make the bottom of the pie crispier.

Yeah, the strawberrry season is here, love this time of the year:) Using chia strawberry jam instead of this filling, well I didn't think about that, but love the idea, it has all, the strawberries, sweetener, even the thickener so you don't need to use cornstarch and almonds at all, will give it a try too.

Refined coconut oil has a milder scent and flavor but a higher smoke point, while unrefined coconut oil is minimally processed and has a strong coconut flavor and lower smoke point! I use the refined for cooking foods, where I don't want a strong Coconut flavor! So the Coconut oil you use in the Strawberry cheesecake muffins has a stronger Coconut flavor! That was my question, I wanted to know if you could taste the Coconut in the Strawberry cheesecake muffins which would be delicious, just wanted to know which one to use!Sorry for the long response! @@susanshade4665 Thanks for making this clear to me, this work expeller made me think it's something else, but yes I do use both in my cooking, refined coconut oil mostly for frying food in the pan, and for baking my healthy goods I use cold pressed coconut oil, I really don't see any difference in taste, works for me anytime.

I made the Strawberry cheesecake muffins, I used my organic refined coconut oil because thats what I had and they were Delish!!! Last two questions if you don't mind. Can you use Blueberries in place of the Strawberries, you may have mentioned that in the video. And I am really wanting to try the bread you made in the microwave, you said you used a 6 x 6 inch square glass pan? I can't find one that size! Can you give me the dimensions or can I double the recipe and put it in a larger glass pan like an 8 by 8 inch or whatever you suggest! I so appreciate you taking the time answering my questions. That's great news, so glad you actually enjoyed the muffins, and yes you can turn these into blueberry muffins with no worries, any berries or even chunks of peaches or mango will do the work. Talking about the glass containter I use, well I just find this dimension works best for this quantity of ingredients and I can beautifully cut it into triangles, but you can use round glass container too, or double the recipe and use your brownie pan, just make sure the batter is not too thick when it goes in the microwave. Actually,I will try this one...:) Too much wasted ingredients on the waffle "experiment" - I have gratitude and respect for food,so dont like to throw it away...:) However,for the first time I will try with about 1/3 of your amount - would that be alright? One question - can we do it without almond flour? Maybe with protein? It's not cheap (almond flour) ,and there is a lot of flour in package just for that small amount in this meal.

Yeah, adding protein powder add the bottom of the crust will be just fine, you can even add some extra oat flour, almond flour is optional.

However,I will try with protein for the first time - I hope it will be fine,since there is no liquid in order for oats and protein to soak it up. Its "safer" (results wise) with the flour,but I will try this option. I'll let you know how it turns out...:)
