Red velvet cake IS NOT just chocolate cake dyed red. I think the whole reason red velvet cake existed was to have a special cake even during rationing times. It has buttermilk/vinegar mixed in the batter to create a reaction to make a fluffy cake. Beet juice was used back then, in addition to coloring, to fill up a cake to keep it moist instead of the rationed butter. There used to be non-dutch processed cocoa that had the reaction that turned the cake red, but nowadays the cocoa is processed so that reaction can't occur anymore. I'm definitely splitting hairs here, but the red was to compensate for the ration of different ingredients not to add to an already beloved rich chocolate cake. There's also a lot of different people claiming to have created the cake first or been the ones to add food coloring first so check out some history about this cake if you are interested. In conclusion, it's probably cheaper and easier nowadays to just put red 40 in the mix then try to balance the liquid of beet juice or other natural colorings like when people were rationing ingredients. So unless Bettel got organic red velvet cake or no artificial color red velvet cake, he probably didn't have beets...at least in any direct connection. This is kind of right and kind of wrong. Since the chef in charge of my internship when I was in training loved to bonk food history into my skull, here's a bit of clarification. The red velvet is a cake from the Victorian era when using cacao was all the rage in high society, it was far too expensive for the commoner and poor people. Natural cocao powder, aside from flavour, with it's acidic properities was used to turn the cake fluffy, soft and give it the famous red color. There was zero beets originally, it was a cake for the rich upperclass. It is far from as bright red as it's modern common versions. The beet juice story is from the World War 2 where canned beets were one of the few unrationed foods. This meant there was a lot of leftover juice and it was only natural to add a red coloring agent to turn the reddish-brown velvet more red. Seeing the red velvet regaining popularity a food coloring company started packaging the recipe with their red food color and here we are with the modern vibrant red red velvet (that sounded odd). It's a curious recipe since it sort of came in three steps and we know exactly when and why it happened. You can buy natural cocao powder in most large grocery stores if you want to try to bake an original red velvet. 😊

Tbf, traditionally red velvet cake was colored using beets, these days they just use food coloring. So Hakka would be correct

Beet is a very very common food colorant actually. And is often used in the more high end/expensive/organic red velvet cakes, instead of red#40 which is made from coal.

That was probably one of the original versions of a Red Velvet cake. Originally they were made with beet juice for the coloring. He's not lying, but they are more often made with artificial red dyes now instead of beets.
