最近このお店の、昼のランチにはまってます。だし汁が旨くて全部飲み干せます。角のない味で出汁は六十年間色んなうどん屋を回った中で　間違いなく五本の指に入ります。

What happens to the dishes when there is a take out order? Are they returned?

From what I understand, there is a service that collects, cleans, and sorts them, for return to the restaurant. Other places will simply charge a small fee to cover the cost of dishes that are kept. And others will just have inexpensive styrofoam or plastic takeaway containers.
