I love how you are showing so much about ganache and what can be done with it. I think the cake is amazing! Your model making is out of this world!! Lovely bright colourful cake. I bet Abbi loved it. Why are we so critical of our own work? If I make a mistake early on, that’s all I can focus on until that cake is handed over to the client. They love it and it takes me all my time and biting my tongue to not say ‘I had a nightmare with blah blah!!’ 😂😂 It’s soul destroying, yet it happens every time. Good tip about going easy on the stencilling. Wondered why that happens. Still to do a ganache cake. I’ve only used it as a coating under sugar paste or as a filling. A good option for those who don’t like icing or buttercream. ❤️🍒 xxx

HAHAHHA I am the same. Yes I've only started recently using it as an outer coating, because everyone seems to love chocolate! And it's fab the white one can be coloured, I'm still playing with it to see what can be done. I've only ever seen these stripes in buttercream so wanted to give the ganache a go!

It turned out great. Apart from the mishap with the piping bag, none of us would have noticed the other things if you hadn't of pointed them out. Would you recommend letting the first set of strips firm up before adding the second colour if not in a rush like you were? Stitch looks amazing. Thank you for another great tutorial.

Awww thank you! Yes the blue ganache I added, that had started to firm up as I was making the purple ganache, and putting it into my piping bag. You could even go one further and pop it in the fridge for 5 minutes just to really firm it up too. :D x

Looks pretty spot on to me!!! I’m definitely not brave enough to attempt horizontal stripes on a cake, I struggle with the ProFroster as it is 😂🤣 Stitch was so cute, and “the client” was chuffed to bits with the whole cake.....especially as she didn’t have to til after her bday 😝 Thanks as always for sharing Tracey, #cherrybrigade 🍒

Wish my mistakes looked that good lol I noticed the width of the stripes in the vlog n was shocked when I saw the teeth on your scraper I thought how the hell did she get that varying pattern lol and ur saying it was a mistake 🤣🤣🤣 I thought it was on purpose and loved it hahahahaha as for that piping bag I felt that in my soul. One of the most frustrating things when working on cakes lol. Anyway loved it!

It looks perfect to me. Stitch is soo cut and abby seems sooo happy. Question you are using much less sugarpaste in your cakes because you have no wedding cakes order but isn' t you paste statch going to be expired? I got 3 cakes to do in september and renshaw paste i bought last year expired few month ago because i did get much orders. Expired in december 19 and june this year and is hard as a rick even in unopened packaged can i try to use it or toss it in the garbage???

Awww thank you! No I don't tend to over-buy my sugarpaste, I get it in 2.5kg packets and buy only 6-8 packets at a time. I've still been using my sugarpaste (Trolls cake, pie cake, caterpillar cake, giraffe cake, and a recent spiderman cake, so I've managed to use up quite a bit!) I have one packet left now but that's good until Jan 2021. If yours has gone hard I wouldn't attempt using it to cover a cake, some of the inner/middle softer parts might be ok for a bit of mould work or very small detail on models. xxx

Do you put the cake in the fridge to cool before applying the second colour of your stripes or apply straight away ? And if you let it cool, how long for ?

As its done with ganache it can set at room temp, but you can put it in the fridge to speed up the process :D Allowing it to firm up will keep your stripes a bit cleaner :D x

I had a nightmare with white ganache at the weekend and am still not entirely sure why. I've had people tell me they always make it in the microwave, or always put the choc and cream over a double boiler and it is "foolproof". Well I tried both methods and both went wrong. Genuinely worried about trying it again now!

I've never seen it go watery....but I have seen it go oily!!! If its separated and got a layer of oil on the outer rim of the bowl you just need to slowly add more cream whilst whipping it....it will come back together!! Check out my white ganache video :D x

I got myself a profroster using your link in one of the videos. Couldn't wait for it to arrive and - got deeply disappointed with it (( Its quality is superb, and it's 100% original but... it's too high for my cakes! In my bakery the most popular height of the cakes is about 2.5 inches. Profroster is obviously designed for cakes that are much higher, and its bottom part doesn't allow me to get it closer to shorter cakes((

Yes my profroster goes as low as 7cm, that's quite a shallow cake! You can raise the cake up higher though so it meets the scraper. If you pop your cake on a board that's the same size as it (Like I have done in my ganache tutorials), place this on an upturned bowl/more cake drums it will raise the cake so you can also scrape the top :D x
