That looks absolutely scrumptious! I use a mushroom brush to clean mushrooms. I need to try that recipe. Also, I agree with the non-stick Aluminum. One of these days, I'll have to share some of my personal recipes with you. VK can get them to you as well. I've sent some to her.

I knew I was in trouble when I saw the title. I'm a mushroom phreak. But in deference to what they grow in, I do wash them. I hurry, pat 'em dry, and let 'em drain on towels, and they seem none the worse for the wear. Nonstick aluminum foil?? Gods!! I'll go looking for it today!! One must ALWAYS test the wine you're cooking with. At least a full glass, and maybe a second if you're still not sure. I'm making these puppies tonight! For ME! LOL

wow, your cooking contraptions are awesome lol! And you got to use so many of them in just this one simple recipe! You pronounce shallots totally differently to me! I put the emphasis on 'lot'. I always use Italian seasoned Bread Crumbs, yours looked plain? Plus adding spicy hot Italian American Sausages or crabmeat , if you dont want Veggie ! Plus using Portobellos can turn it into a dinner more then an appetizer! That's how we did it in my Brooklyn-Queens NY days!

Studies have shown that even soaking mushrooms in water does not cause them to take on water it is perfectly fine to rinse and or soak your mushrooms before using them.
