what are all of those nodes in the export tab? Im new and trying to learn how to set up a way to see my texture better

Those are the default ones that show up when you choose the template Metallic/Roughness when you first create the graph. the basic textures that will be exported once you are done with the material i.e color map, normal map, ao, etc.

I have an unrelated question; Is it possible to "paint" normals in substance painter in such a way that a simple object looks like it has undergone a high-detail normal bake? Eg, some sort of generator or filter to give the edges of a cube a simple bevel inside the normal map? I hope what im trying to ask makes any sense xd

Yeah there's a few filters online for that, to bevel hard edges/uv cuts on a model.
