Many People started baking bread since the beginning of the pandemic. If you have not started sourdough journey, please try this easy care free method to make your own starter (and name her)! You can use any flour- all purpose, bread flour, wholemeal, probably most anything. Just use organic unbleached flour. The virus is really bad this winter- please stay safe and bake sourdough everyone!
Good video. It's a hassle to measure the wheat and water with a scale. I just approximate it.

Margarita Takach, thank you for the nice comment! I agree with you that it's good to approximate- since a small amount of starter is fed to prepare for baking, the hydration of the starter in the fridge may not matter much.
