Sultan's delight is a very satiating and delicious dish from the Ottoman royal cuisine and is still highly preferred on special occasions in Turkey. The creamy puree that harmonizes aubergines, milk, butter, and flour, is traditionally served with juicy, roasted cubes of red meat on top. It definitely will make a table worthy of the sultans. Ingredients
600 grams of lamb's leg (beef if desired)
2 medium-sized onions
4 cloves of garlic
3 tablespoons of olive oil
3 medium tomatoes
1 tablespoon tomato paste
1 teaspoon of pepper paste
2 glasses of hot water
1 teaspoon of salt
For the aubergine puree:
4 medium aubergines
1.5 glasses of milk
1.5 tablespoons of flour
1 tablespoon of butter
1/2 cup grated parmesan cheese
1 teaspoon of salt
1 teaspoon of freshly ground black pepper
