This was super interesting to watch! I had no idea how sugar is made from sugar beets, let alone the whole process behind it. Seeing the machines harvest the beets and then the entire process of turning them into sugar was so cool! The factory part where they extract the juice and process it into crystals was fascinating. It's amazing how efficient the whole system is, from harvesting to packaging. Definitely makes me appreciate all the work that goes into the sugar we use every day!

We vrow sugar beets here in Southern Ontario 🇨🇦. The practice is to harvest the beets and then store them in open concrete pens, several acres in size. They are left in the sun to dry and ferment. At least they smell like they are fermenting from the smell. My impression is that they stay there for a month or so. They they are taken to the processing plant.

There are three methods used: First method: A separate line of centrifuges is used with no water washing, and the pulp is not so well centrifuged. That way the thick juice residues on the surface, and therefore gives a brownish colour. This method needs longer drying, and immediate packaging (therefore a bit more machinery, thus more expensive). This is the easiest method. Second method: After the first centrifugal separation of the white sugar (A-product), the remaining juice has still high sugarconcentration, therefore it is crystalised again to get B-Product, then after centrifuge you solve the B-Product back to the thick juice from evaporators, but the juice from the B-product centrifuges are used again to crystalise it and get C-Product. That C-Product ist brownisch, has much molasse on the surface and in inclusions. This could be sold separate as brown sugar product after packaging. Sometimes the B-product is sold, but that not so efficient for the factory. The remaining juice after the C-centrifuges is molasse, which is sold for alcohol factories. Also widely used, C-Product is otherwise resolutioned for B-Product (higher yield, but more energy). Third method: They take part of the A- or B-product and spray molasses on the surface before drying to separate silo, or better before packaging A-Product as brown sugar. That has many problems because of clogging, extra drying, therefore the least used method.

I think we also just didn't eat as much sugar of any kind. I remember getting oranges at Christmas as very special when I was a kid....you didn't see them all years, like we do now. A lot of processed food has sugar, I remember "TV dinners" were looked at like space ship food as a kid.
