I worked for over 30 years in Australia’s most productive growing region. Both as a maintenance supervisor and production supervisor, so know exactly how sugar is produced and the sugar factory boilers, turbines and machinery is maintained. We were precise and thorough back then don’t know about today.

I worked in sugarcane farm from childhood. Its very hard work coz its all done manually. Burning sugarcane field is when that particular field sugarcane done have much sugar in it. So they burn it and make molasses.

I must say that these harvesters are amazing machines. We have a large sugar cane industry in South Africa but because of the lay of the land all the harvesting is done by manual labour.

Burning made it a lot easier to cut by hand. machines are built to extract the thrash from the cane . Been there and done growing it years ago first cutting by hand then with a machine

Exactly! Brown sugar is made from sugarcane or sugar beets. It gets its brown color from molasses, which is either left over from the refining process or added back to white sugar to give it that rich flavor and color

Hearing an "American" accent I expected you to report on American sugarcane farms. Instead you reported on Australian sugar . You did not say which country the footage on beet sugar production was filmed in . (My apologies if you did and I missed it ) . I did not know that beet has a "white" variety....I thought all beet was a dark purple . There are variations in reaping and processing sugarcane in the various countries . In the West Indies and in Florida the raw sugar is brown....before it is refined into "white" . Rum is also a by-product of sugar production in the West Indies .

As for the beet sugar, the footage was from the U.S., where the 'white' beet shines. Most people know the purple ones, but the sugar beet is a bit of a hidden gem. And yes, brown sugar before refining is a universal story in places like Florida and the West Indies-where rum also joins the party as a sweet bonus! 🌱🍹

If they are "identical" (they are NOT), why is cane sugar sweeter? Cane sugar is a sweetener, while beet is just a cooking bulking ingredient. What types of "sugar" are in each? Heptose, fructose, glucose, sucrose, pentose, tetrose, triose, maltose, dextrose, lactose, and a bunch more " ~ose". Then, there is "Mutarotation", where sugars exist in multiple molecular conformations, some of which have different tastes and (polarised) optical properties.

Interesting perspective! The sweetness difference between cane and beet sugar is actually a common misconception. Both are primarily sucrose (99.9% pure in refined form), and sucrose is sucrose-regardless of the source. However, trace impurities can slightly affect taste, especially in less refined products. When it comes to those other “~ose” sugars you mentioned-like glucose and fructose-they’re generally not significant in fully refined cane or beet sugar but can be present in raw or partially processed forms. Mutarotation is fascinating! While it’s more relevant to sugars like glucose (which can switch between cyclic and linear forms), it doesn’t affect sucrose since it’s a non-reducing sugar and doesn’t exhibit this behavior.
