I made this cake and it was a hit! I made some minor changes to the frosting recipe. Instead of cream cheese, I used two full cups of butter, just so the cake could be left at room temperature. I also used a full cup of brown sugar (about 200 grams) and increased the vanilla to a tablespoon and the powdered sugar to 2 lbs (about 900 grams), so that the cake could have thicker frosting. Helpful hint: when creaming butter and brown sugar (and cream cheese if using that), cream it for about 4-5 minutes on medium high speed (I used level 6 on my KitchenAid), stopping periodically to scrape down the bowl, and then let the mixture rest five minutes before adding powdered sugar. This will help the brown sugar dissolve and prevent any grittiness in the finished product! 😀

While I think a wicked smooth perfectly leveled cake is pretty I actually like when cakes are not super smooth and look rustic or swirled or even roughly frosted for texture. Looks so yummy!

Another great recipe! I think another way to know your cakes are done is when they just start leaving the sides of the pan..All of yours did that perfectly. I find that to be a foolproof method even before poking them!!!

What a delicious recipe! If you’re not too good at eye balling your batter into your pans evenly... Try using a digital scale. (I’ve been a professional Pastry Chef since 1984, the only reason l give little tidbits of advice. 😉)

That should work just fine. If the pan is more than 3/4 of the way full just discard any excess batter. :)

Hi Sam, I baked the batter in a traybake pan and it was perfect, the whole batter fit and I baked it for 20 to 25 minutes and it turned out beautifully and soooo tasty! I halved the icing recipe for the top and it was just enough, thank you. Jayne

I haven’t personally tried it in a 9 x 13 so I can’t say for sure how long it would need to bake. I would just be sure to keep an eye on it as it bakes. 😊

There is a link to the recipe in the description. There is butter in the cake batter AND in the frosting.

You will use butter in both the cake and the frosting. The cake requires 1.5 sticks (12 TBSP) and the frosting requires another stick, so 2.5 sticks of butter total. :)
