Remember this: for some weird reason the magic infused sword ( the purple sword of sulivahn ) cant be parried.

He was one of the tougher bosses for me to beat too. The trick is to dodge towards his right whenever he does his attacks while locking on and getting only a couple hits after he finishes his combo. He'll punish you instantly if you try to chug in front of him so you should only do it when he is a respectable distance away and in the middle of doing his combos. You can do a ton of damage to him whenever he summons his Jojo stand in the 2nd phase by using AOE pyromancy and miracles (not sure about spells as I've never used them against him).

One thing i used to do to get a parry was to get some distance. He thinks you will chug some estus and goes for the quick slash to close the distance, thats when i would parry his ass.

even without parrying he's still pretty easy imo. i actually found the old demon king to be one of the hardest bosses, mainly because i kill him right after wolnir.

I would see where you're coming from except for one thing. Pontiff's closing speed. I'm at a point where I don't allow myself to heal unless he's buffing or spawning the clone. But yeah even without parrying it's really just a matter of knowing what combos with what
