When I retired five years ago, we got back into canning. I used to can when I was newly married. I started with a stock pot and a tea towel on the bottom. I got second hand jars and started with tomatoes. I canned everything from jams to meats. I love pressure canning veg beef soup. Pop it open and heat for supper.We have a produce auction house within driving distance and sometimes I over buy and then can up a storm!!! Canning is a lost art. It is nice to have food on hand. I use my jams and jellies for gifts.

A video full of nostalgia! We canned and froze everything, including beef, fish and game, at my grandparent’s old farmhouse. She made a refrigerator dill pickle that was fantastic. To this day, I am grateful to have experienced that life!

Your canning reminds me of my granny. She always canned mushrooms, pumpkin, pears with cinnamon and many other. It was in the 60ties and 70ties when I was a child. So much good memories. I loved her so much ❤

All that canning you did brings back so many memories of my mom and me spending hours in the kitchen canning pickles, beets, green beans, mushrooms, tomatoes, peaches, etc., etc., etc. Additionally, we made jellies and preserves. Unfortunately, my mom passed more than 30 years ago and I miss that time we spent together. I thoroughly enjoyed this, for me, walk down memory lane. Thank you, Mary. Hi Mary, I've been a subscriber for a few years now. I've never been disappointed. You waste nothing, and preserve whatever you can. I think that is how things should be. What you learned growing up, I'm sure was handed down for generations... That's the way I believe things should be. Know what's in your food, share and exchange, learn to be frugal and yet plentiful in so many different ways. Just to have a reliable community is priceless. Thank you for sharing. I'd love to possibly purchase things that I can work with without electricity. Thanks again for all you do. Maybe we can stay at one of your cottages some day. -

I grew up picking produce in my dad's garden that he grew every summer - I remember the sweat rolling off my nose! We called green beans - snap beans. We'd sit on the porch with a paper grocery bag full of snap beans - snapping the ends off and then snapping them in half or thirds. That's one of my best memories of growing up - I sure do miss those days with my dad on the porch!

I’m sat down and my feet are up….just finished 23 quarts of peaches and 8 pints from some “seconds” my husband found in his travels across southern Indiana earlier this week…. finished of round one of green beans Monday, they’re in the freezer….tomatoes and peppers for salsa and spaghetti sauce are ripening nicely….it’s such a fun time of year. Hard work, yeah, but Some ppl quilt or sew or knit or re do furniture…I can garden stuff… makes me feel accomplished!

For my jam… after I put it in the jar and screw the lid down tight I flip them upside down for about 10 to 15 minutes. When I turn them upright again the jars will seal really quick 😊 avoids the hot water bath to seal the jar!

You are right that you can skip the water bath, but only if you fill and seal 1 jar at a time. When you fill all the jars then put the lids on them, temperature change has occurred and the chance of bacteria starting is higher. And I have never turned them upside down. I have seen people who have online. But I still don't understand why.

Beautiful video-a couple working together for their family❤. Mary, we put fresh snap beans (green beans) like this: Clean, remove stem end and other end. Cut or leave whole-your preference-we did them both ways. Then we lower them down into boiling water for three minutes-remove and plunge over into ice cold water. Remove and put over into the glass canning jars or ziplock freezer bags-whatever you prefer. But the three minute "blanching" in boiling water retains the fresh bright green color.

My grandmother and mother water bath canned everything from the garden, too, so it's what I was more familiar with. To get low sugar jams, mother would use the low-sugar box of sure jell, like you have here, but found that you can use even less sugar. You just need to boil it longer on the stove to thicken it. You can test by dabbing some onto a plate that's been in the freezer (or other cold surface) and if it congeals fairly quickly, it's ready. Another more natural pectin is apple juice, or the juice from boiled apple peels, more specifically. However, it does tend to make a softer jam. Recently, I had some over ripe squash, so we seeded and cut them into bite-sized cubes and canned them. They're prefect for soups, etc, as they started out more firm and hold up well after being canned. I would love to have a separate canning/cleaning/prep kitchen. So practical! Your rows of jars are in inspiration! There's nothing quite like the satisfying sound of jars popping as they seal. :)

Mary, I love these videos. Over the years I too did a lot of food canning. Not so much now. Just the two of us and we are not the big eaters we once were. It is so satisfying to preserver your own food. I remember my mom had a food slicer somewhat like the one one you have that came with her mixer. That item I would be interested in. We stayed in your cottages a couple of years ago and we loved it. It took us almost 8 hours to drive there. We hope to come back sometime in the future . This video reminded me of my mom and dad canning tomatoes, dill and sweet pickles and pears. We had a freezer - so beans and corn off the cob went there. A friend from Pennsylvania always shares her canned dilly beans and Dutch Apple…a great treat for sure. We get together and often exchange some jellies…jalapeño jelly is my favorite. Thanks for sharing….and bringing back good memories for me :)

Thank you for this video. I also was raised with my mother preserving every bit of bounty she could. We always had a huge garden and had access to fruit trees. I got away from it after marriage but have recently started to can a few things. And you’re right, it gives you so much satisfaction to provide for your family this way. I live in central Pennsylvania and it is very similar to your area. We have many Amish communities around us. I love canning and learned from my neighbors. I put a summer kitchen in my garage about 5 years ago and love it! I found an old porcelain sink with metal cabinets for free and a vintage 36" gas stove on Marketplace for $100. I also use the exact same dishcloths that you have and I love them! My mom always gets me a pack of them for Christmas.

I was shopping several years ago at a local Mennonite grocer and came across Christmas Jam; never heard of it, let alone seen it prior to that visit. Bought a jar, and fell in love. I found a recipe; now I make it regularly. Can’t keep it in my pantry. I’ve given it away at times. I get asked from time to time if I have any more jars left. My pantry is currently empty of this delightful treat. Time to pull out the jam making equipment and make up a batch! ❤️

We live in NW Montana and always get a couple boxes of Flathead Lake sweet cherries every year. No crop this year due to weather. Glad I have cherries in the pantry and freezer to enjoy this winter. Thanks for your videos ❤

Mary… I absolutely loved this video. Truth be told, I love all of your videos. I really feel so grounded, so calm, and so peaceful when I watch them. I actually have just gotten everything together to make bread and butter pickles… Hopefully Friday. I haven’t done any canning in 20 years. That, chilli sauce and salsa are on my list for this year. I do make jam throughout the year, but usually just freezer jam. I just find it so fresh tasting. But you are absolutely correct… There is a lot of sugar in it. One of my favorite memories is canning with a friend back when we were in our 20's. She grew up on a farm in S Dakota so she had some experience but I had none. We were in NJ where they grow exceptional tomatoes primarily for Campbells but they were on strike and the tomatoes were ready to be picked. Local farms were practically giving them away if you'd come pick them. We decided to try canning some. First of all, our hubbies picked way too many for us to work with. Then we had no real canning tools to work with and we decided our grandmothers probably were more well equipped. It took us forever but we did can all those tomatoes, laughing ourselves silly most of the time. One of my favorite memories of this friend - we still laugh about it!

I am so glad you did a video on canning, we also can green beans (cold water pack) and I had blackberries and canned them for 5-6 years, but the vines got old and we don’t have them anymore, but we are still enjoying the wonderful jelly. Thank Mary! Another awesome video! Something everyone needs are the brooms at these stores! Not just the soft sweep ones but also the green bottom ones,with longer handles and the orange ones for cement. I used to take my brooms along as a housekeeper and my clients ended up always buying some.

I grew up assisting my mom in canning. As a teen I was paid to do the canning for a local woman. It was just a way of life growing up in Washington state. I still grow Food in a summer garden and either can or freeze my produce. I also can dried beans. As far as we knew only “city slickers’ did not have gardens or even know how to preserve foods.

This video brought back so many memories for me. I used to snip green beans on the porch and help my mother can them. Also canned corn and tomatoes, juice, and whole ones. I got to use the collendar to juice them. And we had a 'root cellar' for the canned items. Southeastern Ohio.

Hi Mary! Thanks to you and your KZbin channel, my husband and I stayed in Holmes County last week for a couple of nights on our way to Savannah, GA. We live north of Detroit. It was such a delight to enjoy some time in your area! We visited several of the amazing thrift stores, an incredible chocolate shop, an wonderful antique mall, had a wonderful dinner,and such incredible hospitality at the Inn we stayed at! We will definitely be back in the fall!
