Sunshine Pineapple Cake | Fast and Easy | Sheltering In Place

Sunshine Pineapple Cake
Ingredients:
Cake:
• 1 box yellow cake mix
• 4 eggs
• 1/2 cup oil
• 1 (8 oz) can crushed pineapple with juice
Frosting:
• 1 (8 oz) container whipped topping, thawed
• 1 small box instant vanilla pudding
• 1 (8 oz) can crushed pineapple with juice
Instructions:
Preheat oven to 350 degrees. Spray a 9×13 pan with cooking spray.
In a large bowl, combine cake mix, eggs, oil, and 1 can of crushed pineapple with the juice. Mix well.
Pour into prepared baking pan and bake for 25-30 minutes.
Allow to cool completely.
In a medium sized bowl, fold together whipped topping, box of vanilla pudding, and 1 can crushed pineapple with the juice.
Spread over the top of cooled cake.
Serve and Enjoy!

I made this cake and absolutely loved it!! It couldn't be easier to make. I liked it so much I decided to mix it up a bit and make another one. Unstead of using the vanilla pudding I used pistachio and topped it with a little coconut. Thanks for sharing your videos. I'm looking forward to trying some of the others. Harriet, so do my Momma and I. The only difference is we use Mandarin oranges in the cake batter and the crushed pineapple mixed in with the pudding and cool whip as our "frosting". We call it a Pig Eatin' Cake.. because it's hard to stop at just one piece. Lol

I made this cake a few days ago. I used the yellow cake mix, two eggs, 1 20oz,can of crushed pineapple with its own juice, mixed, with a spoon, No mixer. Poured into a baking pan, NO oil or grease. Baked at 350, oven, time 25-30 min`s.so good. Nuts or coconut optional.

I plan to make this sugar free by using a sf cake mix, sf pudding mix, pineapple in its own juice, and sf cool whip. I think it will be great. I may even add a little unsweetened coconut! Thanks for sharing this recipe.
