Thanks for sharing this one, Jon. My partner is pregnant and we haven't had chicken in the house since a Mexican mole chicken dish I made catalyzed her first trimester nausea. She suggested we bring buffalo chicken dip to the game day party, and I showed her your recipe. Happy to report that we are officially back on the chicken train!

looks similar to a breville toaster oven, idk if it is but many toaster ovens these days have a very good convection/air fry function

Americans are extremely sweet with "game day", it is the antithesis of what I associate sport with (pubs, chants, violence, cheap beer, repressed homoeroticism, more violence). I love your book but hadn't appreciated this recipe. "Gournay Cheese" is entirely made up by Mr Boursin in the 1960s for customs purposes, I thought something completely up the contrary but fact checked myself.
