Did this for Father’s Day today! Added my own extra little steps like dry roasting some black pepper to add a more smokey flavour, and mixing Hua Tiao Chew with another Chinese cooking wine before burning off the alcohol to use as my Chinese wine base. Besides that, I followed you EXACTLY and it turned out amazing!!!! Great recipe!!! Thank you so much!! 👍

+Alvin Ee If possible, we recommend you to go for fresh kway teow as those sold in supermarket breaks easily due to dryness. In the event that its not possible for you to get fresh ones, take the noodles out from the package and just steam them over low heat for a minute or two. Hope this helps.

May I know where you get the kuay teow? those i get from the supermarket are the thin types and breaks easily and gets soggy. Even those from the market are not like the thicker ones you are using. Thank you.

Hi Roland, the recipe for the gravy calls for fermented black beans. I see your video shows the wet kind of fermented black beans but the kind of fermented black beans that I have is the dry type with salt and some strands of gingers. May I know if I can use the dry kind to make the gravy or must I get the wet kind? Any difference in the taste?

Hi Chef Roland, I had just cooked this dish and it tasted yummy!!! But I added ginger and scallions from your another beef dish recipe into this 😆. My dish looked a lot darker and tasted sweeter. Most probably it's the brand of the dark soy sauce I used. Nevertheless, thank you for sharing.

Hi. I tried few times. But I always encountered (1) the hor fun sticking to the wok; & (2) the hor fun having a "gee" (or do you call that alkali) smell. For (1), I think I add more than the oil you used in the video. What could be the problem? Wok? Or the hor fun? For (2), how can I get rid of the "gee" smell? It really takes off many points from the otherwise nice dish.

Hihi. Your hor fun may be sticking to the wok could be due to the wok being not hot enough. Please make sure your wok is smoking hot when trying hor fun and of course with oil. If you still have a problem with sticking, another alternative is use non stick pan. May I know what wok are you using? Could it be due to your wok not well-seasoned enough? Regarding the alkali taste, I would suggest you to get another brand.

Hi! My wok has been in use for years. Brand is Super-B (Made in Taiwan). To be honest, I don't know if this is stick or non stick pan :) Anyway, I shall heed your advice and try again :)

Wat Tan is best when you put in the eggs when the sauce is really hot and switch off the burner and stir very slightly, then dish out immediately.

My hubby, an amateur cook, tried this recipe, wanting to surprise us. It turned out to be too salty and way too much sauce which was eventually thrown away. The beef, though was tender and juicy.

Hihi. I’m so sorry to hear that. Difference in brands of soy sauce do make a difference because every manufacturer has their own recipe. To counter that, perhaps you can consider using only half of any salty ingredients when cooking then add more after you’ve tried (while still cooking) to adjust the saltiness. Next time to salvage a dish that is overly salty, you can counter that with either more water or add some sugar. You can thicken the sauce up with some cornstarch solution. Hope this helps.

haha, it's a good thing we never claimed this dish is MSG-free :))) Some MSG is fine. It will cause temporary side effects but they are not detrimental to your long-term health.
