Little hint: If you don't have or don't want to use collagen casing you can use veal intestines as casing. That's what we use to make merguez. Those are solid and can last for very long time. Before stuffing your sausage, simply leave the intestines in cold water with lemon to disinfect them. You can't fail it.

A little trick to these to get them even more like a slim jim is to put some pure fat into the sausage mix and after smoking them. Dehydrate them, it concentrates the flavor, makes the skin snap and dries the ends/seals the fat into the meat. It'll be about as authentic as you can get to a slim jim.

Bubba - for years I used the grinder attachment on my kitchaid and thought it was the best thing since white bread. Trust me, invest in a LEM #8 and you'll never look back! Nice video!

I found that if you get some food grade grease available on Amazon and lube the top of the large gear on your stuffer where it contacts the metal frame you will reduce the force needed on the handle considerably.

I also learned in culinary school, that you can use plastic wrap to get the remaining meat out of the grinder. No, it won't jam/mess up the grinder either. I've only ever used the plastic wrap method and it works.

I cut mine to "Slim Jim" link size ahead of time and stuff one at a time. It helps to have someone feed the grinder for you. But, this way I can vacuum seal about 5 per package after smoking.

You should dissolve the #1 Cure in some water (or maybe the teriyaki) before adding to ensure you get it evenly distributed.

Just grab a handful the ground meat and toss it back in the grinder.No bread or ice cubes needed.

Not sure how your grinder works but both of mine are like Bubbas, there is a space about 1-1/2 “ from the end of the auger to the cutting head. The bread is used to push that much out. Throwing more meat in would only result in the new meat being stuck in the auger. And ice works good also.

I know what you mean.You have to clean out the machine when your done anyway so whats left is the ground meat you put back thru to finish pushing the unground meat out.No bread to have to pick out of the meat and no xtra ice/water added to the meat.Disassemble plate and blade,pull auger out,DONE.

that's actually just a pork loin. the tender loin is located on the inside of the back rib. the loin is used for chops and Canadian bacon. and roasts

There isn't really any difference in the meat though so it's pretty much irrelevant if you're using for an application where you're grinding it.

You know, teriyaki is mostly molasses, soy sauce and garlic. Not schooling you but you can easily and cheaply make your own and create personalized spice. :)
