Looks like a delicious salad! I cannot agree with you more about the addition of mustard. I use it in almost all of the dressings I make because it adds a little edge and some great flavor to a salad dressing. I use a reduced amount of high acid ingredients like vinegar and citrus juice and the addition of good mustard makes up for that while adding delicious multifaceted flavor. It is an uncooked sauce more than a condiment when used in this way. La Peral is wonderful cheese and using it with your Sherry vinegar brings out its best. A world class recipe! Bravo, Chef!
