@@raycaruso8026 You can make anything a meal, you don't have to have a hunk of meat or bread next to it for it to be a meal. Peppers, onion garlic and potatoes is a meal, but of course as long as it's not EVERY meal. You don't have to have all food groups every time you eat, you can do it throughout the day. Eating meat, carbs, potatoes, real veggies, fruits, etc for every meal would just make you sick. Unless of course you are eating veggies, fruit, lean meats and healthy grains in the appropriate portion, which most people don't.

Made this today, Thanksgiving, in place of husband’s EXCELLENT Mashed potatoes as he agreed to give it a try!! HE LOVES THIS DISH!! He said it is better than the mashed potatoes!! What I like the most is that it is infinitely LOWER IN CALORIES than mashed potatoes. He had never had Yukon Gold potatoes and just loved them. I had your video running while making for step by step instructions so I wouldn’t mess up. It came out beautifully and we both loved the full garlic clove to just pop in and eat!!! THIS is a new favorite in my home and I KNOW I will be making this many more times. Oh, when he heard you say put it with eggs in the morning his eyes lit up!! Said, I’m doing that tomorrow!! As you can tell... this was a mega HIT in our home! You are a favorite now and I will be looking for more wonderful recipes!!

This is also what they eat in Calabria, southern Italy. I grew up with this. We also used to put it cold on bread as a "poor mans lunch". Very, very tasty!

Thanks for the inspiration, I will pair with fried eggs, substitute jalapeño for green bell pepper, hand crush the garlic out of the skins and add some ancho Chile powder, with a nice glass of Malbec, it will deserve a chefs kiss thank you 😘

@@SpainonaFork love how everything tasted fresh. Garlic cooked in its own skin was gentle and aromatic. I have Pakistani heritage and sometimes heavy spices overwhelm food , especially vegetables... Your way.. The flavors danced with spices.. Lovely

I just started watching your channel and made the red lentil soup which was delicious. My husband is from Spain and I sent him the link so he can watch. These potatoes sound really good, and yes, my husband says it is a very traditional dish.

You can sometimes find roasted cloves of garlic as an appetizer. They're fantastic, and they spread like butter.

Roasted garlic has a very mild taste and a beautifully creamy texture. Try it: it's very different from raw garlic.

...and it's vegan, yay! This looks really good, I'll have to give it a try. Never saw garlic cooked like this. Thanks for sharing!

By cooking the garlic with the skins, it ensures they don´t over-cook and gives them a buttery texture :) much love
