A perfect example of a master knife-man is that we NEVER hear his beautiful razor-sharp knife edges banging through the fish and hitting his work table. I cringe in mental pain when I see western TV chefs "chopping" through meat & vegetables so hard that their $500 hand-crafted razor-sharp knives crash into the cutting board. It is obvious that you treasure & honour your heirloom tools. Well done, Sir.

Okay I'm sorry I don't speak any other language besides English and hell speak but outside of that was that a display or is that supposed to be sashimi I thought sashimi was supposed to be thinly sliced fish or good quality beef never chicken or pork. Really I'm just asking it looked awfully thick to me not saying thick ain't good but I always took sashimi as thinly sliced
